Cook: Food for the Fourth

I ADORE Food+Wine…magazine that is!  They always have some of the best recipes out there for just about any occassion so it should come as no surprise that they are at it again with their selection of recipes for the 4th of July!  If I must cook on this day celebrating our nation’s indepence, the Lobster and Potato Chip Rolls would be at the top of the list!  Lobster and potato chips on a freshly baked roll from your local bakery…sounds divine, doesn’t it?!!?   As would the Grilled Skirt Steak with Chimichurri Sauce or the Caribbean Jerk Chicken.  If something a bit healthier is what you had in mind to keep your summer bod in top shape, shoot for the Beet Salad with Watercress and Fresh Pecorino or the Lemony Chick Pea Salad.  And to finish up this yum-mo meal, the Peach Shortcake with Vanilla Whipped Cream is sure to be a crowd pleaser especially with some of the sweet peaches you can get at your local farmer’s market! Sip: Wild for Watermelon

Watermelon…summer’s natural treat.  Sliced into triangles makes for a happy kid. Pureed with tequila and blueberries makes for a happy mom or dad:)  Give this tipple with a summertime spin a twirl this 4th of July!  The Watermelon-Tequila Cocktail has the makings for the perfectly colored Independence Day bev…red-watermelon, blue-berries, and ice-white or toss on a straw with white stripes!  No matter what you can’t go wrong!
